You could try swithing the sentences around. For example:

I am going swimming later today.
to
Later today, I am going swimming.

May I assume that your writing assignment is to be done in the first person voice? If that is the case, it is somewhat repetetive to say "I" at the beginning of each sentence.

Trying mixing up the sentence order. For instance, instead of "I met Mary at the mall", try "Mary met me at the mall" or "At the mall, where I met Mary ... (continue with what you did next to make it full sentence)"

Or trying adding some other details that will let you write the sentence differently:
"While walking to the mall to meet Mary, I saw ..."
"It was cold when I arrived to meet Mary at the mall"
"Meeting Mary at the mall was just start of my adventure."

First off, prounouns like that should never be used in sentences. Try to steer clear from words like "I, you, we, she, he and they." Instead of saying something like "to make a grilled cheese you have to..." say "to make a grilled cheese one must..."
