I am asking about what types of folk instruments are used in italian folk songs. I know the accordion and the mandolin are the stable instruments, but whats the difference between an italian accordion verses another. and what are some other folk instruments used.

As to the difference between the Italian accordion and the others really I don't know but it's also depending to which of the different types of accordion you're referring.We have also a kind of double accordion as explained in the above article.Probably could be this one...!! Just to list the most popular, besides the mandolin and the accordion, to play the Italian folk music we have :
The tambourine (to play tarantella !!), the guitar , the bagpipe,
the mouthorgan (harmonica) , the castenets.
However I guess you'll find very interesting what is reported in the above linked article.
