If your fingers hurt, then you are quite new at this.
Don't wait til they are red and swollen.
I would stop when they become sore, or when you don't want to play.
Pick it up again, everyday, even if they are a little sore.
If they are sore, don't play too long. If you do you will get blisters and won't be able to play at all.
If your picking fingers are sore, pick or strum more lightly, it's the movement of your fingers that is more important till you get your callouses built up some. As is true for the fingers on the other hand, go lightly. But practice, if you want to play. It won't take long.

It takes a little while to develop callouses and you shouldn't play anything if it hurts. A lot of times new, and old, guitarists have a tendency to push too hard on the strings in the first place. Since you're just starting (I'm not sure what sort of music or what exactly your doing) if you're learning chords or a passage, just finger over the string if you get sore. You can practice right hand by deadening the strings with you right forearm.
Try some experimenting with how much pressure you have to use to get a clean note. If it's still too hard on you, you could buy the lightest strings available for your guitar. Another approach would be to get a guitar that uses nylon strings, although the drawback is ease of play at the cost of a wider neck and a deader tone. A spanish guitar, if you know what I mean.
Your fingers will occasionally get sore and your hands will too as long as you play. The important thing is not to injure yourself.

Don't stop when they star hurting. That will help you build callouses. If your fingers start to bleed then rest for a day or two.You can also turn your guitar around and play with the opposite hand. That's a cool party trick.
