You will need to add
600g aubergines
Oil for deep/shallow frying
Corn/vegetable oil
1 medium red onion
1 - 3 fresh medium green chillies
Malt vinegar
1 lemon

Recipe
1. Wash the aubergines. Remove the stalk. Cut each aubergine lengthways into 4 slices. Sprinkle with salt and leave uncovered in a single layer for about half an hour.
2. Meanwhile dissolve the coconut (sachet 1) in 2floz of boiling water
3. Rinse the aubergines quickly under cold running water and pat dry with kitchen paper. Cut each slice into strips and then in to 1 inch cubes.
4. Deep or shallow fry the aubergines cubes a few at a time until golden brown. Drain thoroughly on kitchen paper. (if you want to roast the aubergines see cooking tip 3)
5. In a heavy based pan heat 2 or 3 tablespoons oil and fry the onion until golden brown. Add the spice blend (sachet 2) and stir.
6. Add the garlic, ginger and chillies and curry leaves (sachet 3) Stir and cook for a few minutes.
7. Remove the pan from the heat and drain off any excess oil.
8. Return the pan to the heat and add the vinegar, the dissolved coconut and salt to taste. Bring slowly to the boil.
9. Add the fried aubergine pieces and stir and simmer uncovered on a low heat until most of the liquid has evaporated. (f the liquid increases either spoon out excess or extend cooking time and gently simmer until the liquid reduces)
10. Finally, add a squeeze of lemon juice to taste
11. Serve with rice, curry and/or other vegetable accompaniments.

It's best to cut them in halves or smaller, then soak them in water overnight. Then put them in the oven on a low gas mark (I'm assuming you're in the UK) for about 1/2 hour after filling them with whatever you choose.
Or, after soaking them, you could just put them in the pot with the rest of your veg curry. I've had good results just cutting them into 5 cm squares and throwing them in the pot without any prior preparation, but then you'll have to let the curry sit overnight before your aubergines get tender.

Put some oil in a pan, but not as much as you would put when frying something.
Cut the aubergines by the length.
Place them on the pan, and wait till they get a brownish colour and become softer.
