Lard contains mostly non-polar compounds because lard is made up of animal fat. Each animal fat molecule consists of 1 glycerol molecular and 3 fatty acids chains. Fatty acids, which contains the polar functional group -COOH, may be either non-polar or polar depending on the length of the carbon chain between the -COOH group and the glycerol-fatty acid bond, but in most cases the carbon chain is too long for the fatty acid to keep its polar characteristics.
