this article i found isn't specifically about the amish, but has a paragraph that mentions what you asked about. apparently they are not required to have a social security number, and they aren't automatically assigned one, but they can get an SSN if they choose.

They generally object to it, but Amish people can request a Social Security Number if they so desire and if they live in either the US or Canada.

IF they do not participate in the social security program they do not need a social security number, but they may still need a taxpayer identification number, which has the same number of digits and the same format but is technically NOT a social security number because it does not entitle one to collect social security benefits. Same goes for a person who is not a resident of the US but still works here.

If they are U.S. citizens and have jobs then YES they HAVE to legally.
