I have had a few days where my typing comes up with something that was way off the mark of what I was going for, I also find the quicker I try to fix it, the more mistakes I end up making

It's because your brain is way ahead of your fingers. Same reason we make mistakes when reading aloud. The brain is ahead of our lips.
