No policies in tipping at the Japanese restaurant. But it is up to you either to the crews or chefs. It is something that how much you can effort! 10%, 20%, 30% or more....

The answer ought to be a simple one .....but it really isn't ..
1.In japan no one tips ..
2.Japanese in America don't really want to tip and either tip out of guilt or just tip poorly//ie.10%....
3.maybe the most important...most Japanese restaurants aren't owned or run by Japanese.. they are usually Chinese or Koreans masquerading as Japanese for a number of reasons ...the popular trend for sushi.//the fact that japanese steakhouses get paid well for food//the snob appeal//the fact that americans love to be lied to //there are so many chinese restaraunts out there ,they might want to just stand out...
Not an easy question to answer

doesn't sound right in the USA I don't understand why the chef would get any of the tip - he should be getting an hourly wage at or above Full Min wage
