Rig up the cameras to administer thousands of volts of electricity through the body of any would-be-shoplifter - that should solve your problem.

Short of calling in a security company to set up video surveilance, only might be a few other options...
1. Put everything under locked glass.
2. Put the annoying locked wire sensors between the video cam and the shelf (when disconnected/cut) alarm goes off.
3. Put a sensor on everything. Make people pass through a screener about 5 feet before they exit the store. If the sensor goes off, doors lock down immediately (even if they are running).
A small inverstment is better than writing off all of the lost equipment. Insurance company would also be happier.

Almost all stores have CCTV cameras in use that monitor the entire area including out side and some are going to be motion activated also some have private security officers on site that will conduct regular checks . If their isn't private security then the local Police will conduct business checks and regularly patrol the area they do this at random intervals for obvious reasons.

I think the best thing for you to do would be to invent some kind of anti-theft technology to use in your store. Yes, it may sound crazy, but it may be possible to use commonly available items to create an effective system. Some of these things may be readily available in your immediate environment. Lets make a list:
1) Rope
2) Electrical tape
3) Wire, lots of wire
4) An oatmeal box pinhole camera (find instructions on the Internet)
5) Epoxy cement
6) Bag of dog food
7) Guard dog
With these items you can construct a pretty nasty trap, and you can create evidence (picture using the pinhole camera) to use against the perpetrator(s) in a court of law. Of course you should also use one of your own video cameras, which will come in very handy as bait.
Good luck!

Probably nothing that you are capable of doing but at least you should be able to take accurate stock by counting the number of stolen items appearing on the tape of the hidden security camera!

That's rather ironic, stealing security cameras. Maybe use some of them against them? Taking the product out and only putting it in when they buy it (like they usually do to CD's and DVD's) should help.

One of our local stores only displays the boxes, which are empty.
The actual products are kept out the back.

well apparently it has to be someone inside doing this. So put some cameras where you can watch that and i bet with out knowledge of anyone but yourself you will find out whose doing this.
