Wow, that is a great question. If we could answer that, we would really be on the way to peace.
Since we are all sinners and imperfect, we do and say things that offend others. But, we have become so comfortable in our lives that we accept ourselves despite that shortcoming and defend that negative side of our life. Then, when someone comes along that is different from us, it is a threat to our "comfort" level and we have a tendency to judge them on something that THEY do, which we disapprove.
You are right, good question. If we could shut up long enough to see our reflection, we wouldn't be gossiping, judging or harassing others who are different.
Check Luke 7 for rules on this.

Unfortunately it is built in. It's an old survival mechanism that humans no longer need.
When cavemen lived, that 'NOT LIKE US' mentality kept groups together increasing the chances of survival and reproduction. Though some people refuse to admit it, this still plays a part in human thinking today.
Recognize that you, as a human, are going to react to things about others. Just train yourself to take a moment during that time to decide if whatever is bothering you is important or unimportant. Most of the time you will find that the differences are not that significant.

Because we all have superiority complexes! it is an ego thing that makes us feel better about ourselves by looking down on others! It is a bad thing to pass judgment on people be cause of their appearance, how they talk or where their from! As the old saying goes "Judge not lest ye be judged!" Until you get to know someone don't be critical of them!

All humans are making judgments and decisions all the time about everything, that's part of life and survival. "That truck appears to be going very fast, I'll wait before I cross the street." "That man looks very angry and has a gun, I think I'll go the other way"
If we weren't making judgments constantly we would all be dead.
People will make judgments in part based on your appearance (skin color, weight, etc.) and also on your presentation of yourself (hairstyle, clothing choices, mannerisms). I had a friend once who was very attractive and androgynous looking. She kept her hair in a flat top, wore mans cloths, acted and moved like a man, had a number of visible tattoos and acted very much like a dyke (which she was). She got really angry one day and was sounding off to me about how people judged her on her appearance. I had to laugh, because she worked so hard to appear a certain way, then got angry when people thought she was a dyke!
You can't control other people making judgments, but you can control your presentation of yourself. If you look like a hippie, some people will think you are a hippie and treat you accordingly. That's life. Get used to it, or change your self presentation.

We also judge people for being alike.
Comparisons are automatic and unavoidable. It is part and parcel of thinking. What we do with our conclusions is what causes the problems--that and an inability or reluctance of some to change opinions or gather a full set of information on which to base our conclusions.

Dear Erin
As well as being amazing, rational, creative and loving beings, we are all animals as well. We have to live in constant pull from all these elements and that (in my opinion) is the essence of humanity. As wonderful and diverse as we all are, we still need to peck and bully and feel better or worse than others.
Basically, its only natural.
Just keep a loving heart and it will carry you.

I really really really try to not judge people.
And ultimately I guess only each of us can really know what is good for us or even just what think might be good for us.
Sometimes though, I see somebody being really stupid so it becomes hard to NOT judge, I still try not too though.
When you see somebody arranging the deck chairs on the Titanic and you see the iceberg, you try to point it out, you warn them even. They don't even want to see it so they don't.

We judge other people because it is convenient to focus on other people rather than ourselves. Moreover, judging others shows the level of judgment that we impose to ourselves but cannot admit it -yet.
