When William graduated this week, they referred to him as William Wales. Why is that if his last name is Windsor?

The offical Surname of the Royal Family is Windsor, after the castle, which is the family home. It was changed in 1917 by George V from Saxe-Coburg-Gotha, which is germanc in origin. George took the sensible decision of changing it to an English name during World War 1, kind of as an act of patrotism, and partly due to the hatred of Germans during the war.

Since Charles is HRH Price Charles, Prince of Wales, William and Harry are automatically Princes of Wales, which is why at school they used the surname Wales

They probably referred to him as Prince William Of Wales. The title went to his mother as well. Diana, Princess of Wales.
