How can I can her without hurting her feelings that I'm not intersted.

Be calm and polite when you tell her - "I'm flattered but, sorry, I'm not into women"

She'll still hurt (hopes dashed) but she'll get over it and you'll be able to keep your friendship.

She is a good friend so you should sit her down and have an honest conversation with her. It might be inevitable but there is a chance that her feelings are going to be hurt.

Ask her straight forward if she is hitting on you first.
If she admits, tell her you really are into men and value her friendship but her making advances makes you a bit uncomfortable.
Make sure to tell her she is by all means an attractive woman and great person to be around but alas your feelings are just friendly not affectionate nor sexual.

Have fun and laugh it off. If you have another female lesbian friend and think they could get along, make sure you play cupido.

If you don't want to do the honest sit down thing, catch her in the act. When you feel like she is hitting on you, just ask her with this very surprised look, are you hitting on? With yes or no, just state that she should know better and that you two are good friends and that's it. Tell her you are not curious and value her friendship. Then continue to ignore the subject.

I agree you need to just tell her. Alot of lesbians ive noticed seem to get a crush on straight women, i guess its just the thought of it. But if I have a crush on someone straight i would rather them tell me they are not interested instead of thinking they are leading me on. Some women do that not even knowing it. Good luck
