Why didn't the US annex more of Mexico back in 1840 when it had the chance?

That would have been awesome.

We didn't want Mexico. We wanted it's possessions that in our part of North America. They became California, Nevada, Utah, Colorado, Texas, Arizona and ,New Mexico.

Because we are not an Imperial state, we are a democracy. Plus, there was the losing effort at the Alamo that prevented the Americans from getting too pushy with Mexico.

We had enough trouble holding on to what we got then. Remeber the Alamo?
