In the rat fancy white rats with pink eyes are referred to as Pink-eyed Whites, PEW for short.
How about the name "Peppi le PEW", makes it sound like the name of that cartoon skunk. Works for a boy or a girl.
Yep, sometimes I go waaaaaay out on a limb in figuring out names for my rats.

Socrates (from the movie Willard)
I named 5 brothers after food that represents their color: Barley, Cauli, Sugarbear, Tater, and White Cheezer.
