i spent a whole day by myself the last time i went (wasn't getting along with my group). i'm typically not a person who likes to hang out by myself, but it was the best and most memorable time i had.
i walked down the entire strip...it took a whole a day, and it was ALOT of walking, but there was so much stuff to see. i checked out every hotel and grabbed some matchbooks as souvenirs (i was a little broke too lol). it's amazing how no two hotels are alike. i did alot of picture taking, and people were friendly enough to offer to take pictures of me too.
a little walking tour like this is a great FREE way to get aquainted with vegas,, and get an idea of what hotels you might want to visit later on in your trip, or for your next trip.
the helicopter tours and hoover dam tours are great too. you can also rent a posh car and drive around and play millionaire for a day.
definitely check out the shops at ceasar's palace, and the white tigers at the mirage....you can see them for free as you walk thru the hotel entrance. the venetian is another wonderful place to see STUFF, like the wax museum; or treat yourself to a gondola ride. mandalay bay has the shark tank, which i didn't get to see but heard it was great.
also, i felt very safe walking around by myself ( i was 22 at the time). there were always crowds of tourists everywhere, and in areas where there were basically no pedestrians but me, there were always alot of people on the roads driving around. not scary at all.

Maybe not the most interesting thing in the world to you, but impressive never-the-less; take one of the bus tours or rent a car and check out the Hoover Dam!! Huge! Bus tours that include a ticket to tour the dam should go for about $40.00
In reality, if you haven't been to Vegas before you could fill an entire day just going through Hotel/casinos and checking out places like the "Secret Garden" and dolphin habitat at Mirage, there is a beautiful aquarium/shark exhibit at Mandalay Bay, art museum at Bellagio, etc, etc. TONS of stuff to do safely that you will find interesting. Vegas has a lot more to do these days than just gamble, have fun.

Go shopping! =) Seriously, even window shopping. Wynn, Ceasars' Palace, Aladdin (might be Planet Hollywood now), and Venetian ALL have GREAT shopping malls. You'll see everything from the Gap to Versace there.
You can also do a group tour of Hoover Dam or Ethel M Chocolate Factory (complete with free samples of chocolate!) - ask your hotel concerige how to sign up.
All the hotels have attractions as well - Mirage has the Dolphin Habitat and Sigfried & Roy's Secret Garden, Mandalay Bay has Shark Reef - for starters. Some of the hotels (Bellagio and Wynn) are just gorgeous to walk around in.

Assuming you will party and do the touristy strip thing with your friends after the convention. I would do the hoover dam tour. Like the other poster said that is unbeleivable.
If you are a shady character and looking to do stuff on the cheap, sign up for one of the time share pitches, go, get the free show tickets, meal tickets and then say you don't want to do it.
I did this alot in college, it is shady but if you have nothing better to do it can get you some free swag.
I would still take the tour though.

Assuming you don't want to gamble, LOL, trips to Hoover Dam and Death Valley are very interesting. There must be about 1000 other non-gambling things to do as well right in LV. When you get there, you'll find that there are brochures everywhere about stuff to do. Pick a couple up and browse through them.

Take that helicopter ride threw the Grand Canyon! Don't Drink before the ride. It was great and one of the only things I will always remember.
