(1) Longer term project:
Growing beans in a milk carton. (The "experiment" can consistent of measuring the height of the stalk if the beans are grown in sunlight near the window or in the closet in the dark)
(a) This is good because the kids have fun collecting the cartons at lunch, and watching the plants grow.
(b) They also get to practice using their rulers in a real life application, and learn to follow steps over a longer period of time

(2) Short term project
Paperfolding airplanes and measuring how far they can fly, with or without paperclips or pennies added to increase momentum.

Since it is supposed to be an "experiment" and not a model (I as a teacher always grade down for students that don't test something) recommend something easy yet testable like seeing where water evaportaes the best (ex. outside, inside, in a closet) or if bread will mold faster in a fridge or out in a regular room.

The main thing about a science project is to make sure that:
1. It is something testable. That's why it is a science experiment and not just a science model
2. Do something unique. I have only been teaching 2nd grade fot 2 years and I have seen 7 volcanoes and 9 diagrams of the water cycle. Those are only cool crafts and they are not and experiment.
3. MAKE THE STUDENT DO IT!!!! IT IS NOT A PARENT SCIENCE FAIR, IT IS A 2ND GRADE SCIENCE FAIR. WHEN A 2ND GRADE STUDENT USES THE PHRASE "EFECTIVENESS OF THE PHOTOSYNTHESES" AND HE SPELLS CAT "KET" IT IS NOT HIS WORK.
(Sorry I had to get that off my chest)
4. Have the student make a guess as to what will happen and then explain to the best of their detail why they think it did or did not happen.

The old "volcanoe model" model is fun and educating. Use clay to reproduce volcano use a paper towel or toilet paper roll for opening..."Lava" can be mixture of food coloring, dish soap, and vinegar...effects (aka lots of bubbles) don't last long so that would need to be done during presentation of project. But it gives them the chance to learn about volcanoes and a bit of a chemistry lesson
