1. symbol, symbolization, symbolisation, symbolic representation:
something visible that by association or convention represents something else that is invisible; "the eagle is a symbol of the United States"

2. an arbitrary sign (written or printed) that has acquired a conventional significance

So asymbol is a sign, but all signs are not symbols.

SIGN is a mark having a conventional meaning and used in place of words or to represent a complex notion, something material or external that stands for or signifies something spiritual. SYMBOL is something that stands for or suggests something else by reason of relationship, association, convention, or accidental resemblance; especially : a visible sign of something invisible. That is what the Merriam Webster dictionary says. So, the main difference is: a sign can be solely indicative, or can be also representative or substituting of the concept. The symbol is always representative, and not only indicative. A symbol usually have a similarity or correspondence to the thing or idea it symbolizes, and the sign can be a rather arbitrary image, or a conventional one.

A symbol is a representation of another thing. For example, a symbol for Christianity would be the cross.

A sign, on the other hand, is something that would direct someone to a person, place or thing. For example, a road sign to give the right direction to your destination.
