Hmmm...
If you like intrigue, backstabbing, betrayal and bloody violence, try A Song Of Ice And Fire series, by George R R Martin, first book of which is A Game Of Thrones.
If you like dark, seductive fantasy, then the choice is easy, The Black Jewel Trilogy, By Anne Bishop, Book one is called Daughter Of The Blood.
If you want comedy mixed in with your knights and dragons then any of the Discworld books by Terry Pratchett will fit your bill
Or for pure adventure fantasy, I still haven't found any to match the original Riftwar series by Raymond E Feist (Magician, Silverthorn, A Darkness at Sethanon)

Anything by Terry Pratchett. I love Lords and Ladies, Good Omens, Wee Free Men, A Hat Full of Sky, The Amazing Maurice And His Educated Rodents, Thief of Time. Come to think of it, I love everything. His books are amazingly inventive and extremely funny. But you've probably already read his books. If not, you definately should.

I highly recommend anything by Terry Goodkind. Its best to start at the beginning with "Wizard's First Rule." All of his books are continuous and are known as the "Sword of Truth" series.
I would also recommend
Lord of the Rings-J.R.R. Tolkien
Fire and Ice Trilogy-R.R. Martin
Once and Future King- T.H. White
The Elric Saga- Michael Moorcock
Anything by Erik Erikson
Oh yeah and "The Prince of Nothing Series" by Scott Bakker

It depends on your age, but I personally recommend :
The Belgariad by David Eddings (Pawn of Prophecy, Queen of Sorcery, Magicians Gambit, Castle of Wizardry, Enchanters End game)
Knights of Dark Reknown by David Gemmel (All his other novels are excellent too, but thats his best IMO - also check out his Drenai saga and Wolf in Shadow. His recent death is a sad loss!)
The Assassin series by Robin Hobb
Anything by C.J. Cherryh is usually pretty good. Her fantasy isnt as good as her sci-fi tho, but "the Chronicles of Morgaine" are good.
I'm personally not a bit fan of the Thomas Covernant series (by Steven Donaldson) or the Magician series (by Ramond Feist) but I have many friends who are.
Between those, you should have somewhere in the region of 20-30 books to keep you going for a while !
