Well, the bluish tinge the Blue Mountains take on when viewed at a distance, which is caused by the release of volatile oils from eucalyptus forests.

The mountains look bluish in colour due to the dispersion of light coming from the mountains. Due to this dispersion, wavelength of light that reaches us is shifted to lower wavelength, thats why they appear blue.

Simply put the atmosphere (sky) has a bluish color, things that are far away take on a cooler appearance because you are looking through more atmosphere.

My guess is the increased amount of atmosphere between you and the far away mountains bends the green light (from the foliage on the mountain) and turns it blue.

my guess is that the white snow or the ice on the mountain reflect the colour of the sky, therefore giving it a blueish appearance.

One could go on and on with the science, but mostly it is dust and moisture playing tricks on your eyes by scattering or fragmenting the blue light.
