Well you're wrong about the theme parks not being romantic. I dated my now husband at Disney World - its the best place to go on a date!
You could reserve an excellent dinner at one of the Disney Resorts (Victoria & Albert's is ranked as one of the nation's premiere restaurants!), take a private cruise around the lake, dance at Pleasure Island together...etc...

But if you're really not into that at all, here are some suggestions:

Head down to Sarasota for the trip. There you will find Siesta Key Beach - my favorite beach in the nation and ranked as Florida's #2 beach on the travel channel. It is known for its pure white, baby-powder soft sand! Pack a picnic lunch or enjoy a meal on the waterfront - there are lots of places to enjoy.
Or head west to Clearwater Beach. Make dining reservations at The Rusty Pelican or Castaway's. Both have great bay-side views and serve amazing food. The Rusty Pelican is a tad nicer - and you'd want your guy to wear a sport coat or suit - you in a dress. Castaway's is a bit more casual (you can show up in casual clothes) but the atmosphere is still nice. And the beach is beautiful there!

Epcot at night is nice. Also, there are many dinner theatre options, however the food is not great. There are also many great dinning establishments. Try Seasons 52 (trendy and fun) on sand lake.
