Depends what you choose to shrink. If you don't uncheck the 5.1 stream then the program will typically try to reduce the quality of the various video streams. If sound is very important to you, you will have to reduce video quality or delete bonus features to get the size down to a burnable number.

Short answer though is no, your 5.1 stream should remain intact as long as you don't do anything to it.

No you don't lose any noticable quality whatsover with DVDshrink.
