Because they are naturally curious, and when they see themselves in the mirror they are amazed by what they see.
Also, babies like bright, shiny things in general. For example, have you ever seen a baby stare up at a lamp, or the ornaments on a Christmas tree? It's really very cute. =)

A scientific theory is that:

"Babies, like almost all other animals, interpret the image in the mirror as another person. Between the ages of 18 months and 24 months, though, toddlers develop the ability to recognise their own reflection. At around that time, children start to show sympathetic concern for others. If the baby is interpreting the image as another person..then this shows that they are exhibiting sociability.

babies like to see things that are repetitive and the same thing over and over. It gives them a feeling of comfort. Looking at a mirror gives the same feeling of comfort.

babies like mirrors because for 1 it's a baby 2, it's doing the same thing that he\she is doing, movement lighting ect...

They don't understand what a mirror is or what it does. So, for them, it's like there's someone in front of them that copies everything they do. Think about it, if you thought there was a twin of you right infront of you doing everything you do wouldn't you be interested?

At first they are curious as to who is in Mommy's arms. Then they realise it is THEM in Mommy's arms it takes a long time to come to terms with the idea of seeing yourself outside or yourself.

It helps them form a sense of identity and learn that Mommy and Daddy don't see and feel things like I do.

Because they think it's so interesting when they move and the person in the mirror copies them!

cuz then they don't think they're the only baby left on earth... ;) i guess, its so they think they're not alone.
