Everyone's always impressed with kids who have an interest in the world as a whole, so I recommend Model UN Club or becoming a Rotary Exchange Student (or go on exchange through another program, but Rotary happens to be one of the best). They also like diversified students, so do a few different things like choir, drama club, and mock trial or FFA (if you have that; some schools don't). If your grades are good and your teachers like you, being asked to join National Honor Society is a definite notable thing to put on your college apps. Mostly, do what you like and what interests you because otherwise, you're just wasting your time.

If you have any idea of what you want to major in, colleges are always impressed if you have already volunteered, worked, or done anything related to your intended field of study.
