Everything. I like the answer above about how you are an example of evolution. You aren't the same as your parents on a genetic level.
Also, another example of evolution is the recent development of "superbugs." These are bacteria that have changed so that they are now resistant to antibiotics. How did they change? Well, there were people infected with said bacteria who didn't use the antibiotics long enough to kill the entire population of bacteria. There was a small segment of this population that just happened to have a resistance to the antibiotics. Perhaps this resistance is tied to some other genetic trait of the bacteria, but most likely, it was just random and fortuitous.
Now, you only need a few of these guys, right? They begin to reproduce, and each generation that descends from these guys now has the same trait of resistance to antibiotics. As fast as bacteria reproduce, it doesn't take much time for the person to be re-infected with this new strain of bacteria and pass it on.
That's evolution.

There is a kind of locust that has spontaneous mutations every birth cycle, sometimes it has no effect on the species, like when the mutated to have red eyes. Other times, however, these mutations can help the species, like when they suddenly deveolped an immunity against pesticides. This is the only example that can be seen in one life time, it is a slow process, but there are more applicable examples, like when a fish, for some reason had a deformity that allowed it to breath in air, thus, te begining of life on land. Or years later, an ape that took it's first shaky steps on only two legs. These are all examples of evolution.

The appearance of more and more drug resistant strains of bacteria is one of the best examples.
Doctors should ask their patients if they believe in evolution, and then ask them if they want the old treatment for tuberculosis which doesn't work any more, or do they want the new treatments for the new bugs.

longer legs on prairi dwellers
camouflage coloring on fur or skin

doplhins whales orcas etc
mammals that adapted to the water
etc etc etc.
all evolutionary effects
to be found in all life forms that over the millions of years have kept pace with the changing Enviroment and preditory factors

peppered moths in england.
they were white. before industrial revolution they could hide on light bark trees, hide from predators. after the industrial revolution they turned black as the bark on trees were tinted black because of chemicals.
other examples are: bacteria against antibiotics, finches' beaks on galapagos island.

evolution: some species of birds have had their beeks chaged shapes over time... so that they can fit into small cracks and get food/insects that they will eat.
