Many reasons...:
1. To bring something new to their life if they fill their life is empty, without purpose, or boring.
2. To expand their mind (actually trying new thinks help your brain "grow") Your brain makes connections between the neurons when you try new things..
3. Do something productive... People now see TV all the time, hours and hours and hours of the day wasting your time watching TV when you could be making paintings, sculptures, making a garden, etc.
4. For the fun of it!!! Some people actually enjoy learning new things or just making material thinks (being productive)...

Well, it's not a bad idea to challenge yourself with new activities and pastimes. Our brains can always benefit from learning new things. A new hobby can relieve boredom or routine.
Interesting question!

It's not that they 'should'. Its a choice. But if you're interested in something, whether it's baking cakes or biochemistry, it's nice to explore it. It enhances you as a person, because the more interests you have, the more intersting you are.
