Right before it dies, a Phoenix collects Cinnamon and Frankensense branches in a Palm tree, and creates a nest/Pyre. It then Beats it's wings so fast it combusts, and the Phoenixs burns to ashes. In it's place is a worm, that becomes another Phoenix in nine days. It then collects the ashes of the Pyre and old Phoenix into the shape of an egg and flys it to Heliopolis'(On is the Egyptian name) sun temple, and off it flys to far away lands, never to be seen again for another 500 to 1500 years. accounts vary about the description of the bird; The Egyptians said it was the size of a Heron and called the the Benu(Bwn or Bnw). Greeks described it as an Eagle sized bird with Crimson and gold feathers, and that's where the modern Phoenix probably evolved from. The Russian Firebird, while similar, is most likely a separate (though similar) Phoenix like creature, as is the Chinese version and the Japanese version(Ho-oh).

The other answers here pretty much cover it for mythology, but I thoght I'd mention that the phoenix was also a symbol in alchemy. Usually some red substance was burned (or it didn't have to literally be red, only have astrological and obscure phoenix-like qualities) to generate a new form of itself.
