if the files are mp3, then just transfer as you normally would from the itunes folder. if the music files have been encoded using the Apple encryption (m4a files if you ripped, m4p if you bought them) then these will not play on anything other than an iPod. you can burn a CD from a playlist and then rip this to mp3, but this will result in some quality loss.

If it's music purchased from iTunes, it won't play on anything other than a iPod. However, you could always rip that music from iTunes to an audio CD and then using another program (I don't know if this will work with iTunes) rip it from the audio CD to an MP3.

There may also be some programs out there that will allow you to convert the iTunes format to MP3, but I have never used them.

Ipod music is encrypted, so it's not an easy task to unlock itunes songs. I used to use a program called JHYM and Iopener, but I'm not sure if they work anymore. Searching google for how to unlock Itunes music is your best bet.

open up the music folder that the music is in and then transfer it to the mp3 player.
