The generic name for fats is lipids. The white part of the egg is a protein called albumin, The yolk is composed of multiple lipids and fatty acids which vary with the species. Chicken eggs contain tryacyglycerol, phospholipids, cholesterol esters, alpha-linolenic acid, and oleic acid. It also contains the germinal cell of the chicken embryo.

This is not easy... Many types of fats inside the the egg yolk. But there is a special lipids (fat) in egg yolk, which is lecithin. Lecithin is a phospholipids that possess emulsification properties

There are various fatty acids:
Oleic acid, palmitic acid, stearic acid, linoleic acid, linolenic acid and arachidonic acid. Oleic acid is the most common fat in chicken eggs.
