I am not trying to be crude here, but this is what I read. A long time ago, way before toilets and such, it was normal to use the left hand for wiping. Obviously, you wouldnt want to use that hand when greeting another person, so the right hand is used for shaking hands. The tradition just stuck.

In ana overwhelming majority of people, the right hand is dominant, and is the hand in which we hold weapons.
When men would greet each other in the hold days, an open hand with no weapon was a sign that the threat was minimal.
At the same time, the Latin word for left was "sinistre", sinister.
From time immemorial, the left has been associated with the evil, the underworld, the submissive,
and the right with the good, and dominant.

It's simply a convention to avoid confusion and avoid trying to shake hands with the same hand as the other person. Kind of like why we all drive on the same side of the road eh.

It's a custom - if everyone does it the same, everyone knows what to do.
BTW, Never offer your left hand to a Muslim. It would be considered VERY offensive.
The Koran spells out many things for Muslims, including personal hygiene practices - the LEFT hand is always used for wiping, and other dirty jobs.
That way, the right hand is considered to be pure enough to offer to someone. The left hand would only be extended to insult someone!.
