They can be used to model complex data sets and solve large sets of simultaneous equations. Once you take a linear algebra class you will have a wonderful love/hate relationship with matrices. They are very useful in the solving of complex problems but they themselves can get very large and difficult to handle.

I've seen them used to project populations, both of countries and of insurance policies.

This allows planning for building/closing schools, hospitals etc.
