Deeb's list is fairly good, with some comments:

Emus (3 species)
Cassowaries (2 species)
Kiwis (3 species)
Ostrich (1 species)
Rheas (2 species)
Penguins (17 species)
Kakapo (Strigops habroptila, a flightless parrot)
Galapagos cormorant (Phalacrocorax harrisi)

There are also several species of flightless rails, especially in New Zealand (see second source).



Dodos and moas are extinct, I wouldn't include them (or you'd have to also include Diatryma, the Phorusrhacids and other large flightless birds).

There are many kinds of birds that can't fly. One
group that is rich in flightless species has not been
mentioned in the other answers, the rails. Island
species of rails, especially, often lose the ability to fly, the Takahe of New Zealand and the Guam
rail, for example. I don't know where one answerer
got the idea flamingos can't fly, they certainly can.
The elephant bird of Madagascar and a parrot on
the island of Mauritius, now both extinct, were also
flightless, likewise the dodo, which was a sort of
turkey-sized relative of the pigeon. Many kinds of
birds don't fly very much, but can and will if
pressed, chickens and turkeys, for example, though the domestic breeds are often not very
good at it. The wild ones do better. The domestic
ones have been deliberately bred for weight, which
makes it harder for them to fly, and probably also
for reluctance to fly.

There are actually more than 2 birds that don't fly. There are:
1) Ostriches
2) Penguins
3) Chickens
4) Roosters
5) Flamingo
And many others.

Deeb is about the only lister that has it together.
The other lists are pretty hit and miss.

I'll only mention the worse:

Most Galliformes (turkey, wild and domestic chicken ... ah, roosters ARE chickens, peacock, grouse, etc.) DO fly but prefer to run from danger.
Flamingos do fly.

Wikipedia, I noticed, have some classifications wrong (don't quite know what they have that is COMPLETELY correct) so don't go by them for the Orders. Otherwise, they have a good overall listing.
