I have a wooden chopping board that my Grandmother built and to clean it I spray it down with a bleach cleaner and let it soak a few minutes then scrub it with sudsy water. The most important factor is to make sure it is thoroughly dry before storing it so molds don't grow. My cutting board actually doubles as a kitchen sink insert so I keep it open to air at all times and it is over 50 years old.

Dishwashing detergent is used to clean kitchen utensils. If there are deep chop marks on a chopping board it is best to sand off until board is flat again. Wipe with mineral oil to seal the wood grain. Repeat applying mineral oil regularly to prevent moisture and food seeping into the wood.

Best way to clean any cutting board is to put it into a dishwasher on high heat. (If you have a dishwasher) If you don't have a dish washer, I recommend dumping the wooden cutting board as it's really tough to sanitize wood and it's susceptible to E Coli and other dangerous bacteria.

Let is soak in the sink with really HOT water with about a Tablespoon of Clorox for about 15 minutes, to sanitize it. And then you can pour tablesalt over with a sponge and scrub to get any sticky stuff of it, then rinse and let air dry.

Do what the butchers do to their chopping blocks, they have metal scrapers that takes off all the grease, blood, fat etc. before they wash them

Get a cheap bottle of peroxide. It kills any bacteria that seeps into the wood.
