Ermita/Malate is the best area to be in.
All the people who say Makati is great, are only thinking about Greenbelt, a noisy, crowded posing place for wannabees and people who are hoping to be picked up coz they can't afford a drink on their own. Boring, boring.
Ermita has some great bars, either for drinking or picking up ladies, but no pressure- Amazonia/G Point/LACafe, and a host of other smaller, friendly places where there's no posing with silly polo ponies or crocodiles on your shirts -normally fake ones anyway!
Malate is even better for eating and bars like Cafe Havana.
Robinsons has a huge mall right on Adriatico with TGI Fridays and fast food crap.
There is a whole bunch of 40usd a night hotels on Mabini st - Dos Palmas/City Garden/Citystate Tower/Las Palmas/Corona etc etc, which are all clean and right on the street between Robinsons and Baywalk, where you can walk down to the yacht club past various noisy bars, all playing different music, but also watch the sunset which is normally great, especially if the traffic pollution is having a bad day!
Park Hotel at Paco has a swimming pool and good Australian food, about 40usd a night.
Best Restaurant in the area is Juri's on Del Pilar st. Belgian owned, with a life size cow outside, great bar, try the Bitteballen as a starter or bar snack - perfect.
Another good deal is the small bar/resto opposite the entrance to the Citystate Tower Hotel on Mabini, called Munchen Pub.
A five course set meal, which includes coffee/brandy is only 6 usd, and is good. Their goulash soup is also very good and enough for me as a meal.
Try the Swagman on Flores st. for big Australian meals, the top floor of the Iseya hotel on Del Pilar st, for a good bar and very good/cheap Sunday night BBQ.
There's plenty more to choose from.

ermita is not what it is used to be since mr lim closed all the bar.i was there 2004 and i did not appreciated of being there.my best advice is go to cebu.i have never been there but most people who have been in cebu says is a lot better than ermita.stay away from that place if u can but if you must then always look over your shoulder.have a nice holidays.
