What can companies actually offer/do when they say they will help with relocation?

It depends on the company and on the job. High level positions (VP and above with salaries in excess of $100K) typically will provide coverage for the moving of your household goods, temporary living while you are getting set up in the new location, and help with real estate costs (closing and realtor costs) on the buy/sell of a home

Other companies will provide just coverage of household goods (ie pay for a uhaul)

Some companies will just give you a flat fee and say ok we will give you a check for a predetermined amount of money to help with moving

Some will reimburse you for moving cost, some will give you a set dollar amount. It really depends on the company's relocation benefits and how much they want you. I've heard of one company that wanted a new hire to relocate right away but the person could not find any buyers for their home so the company bought the house, and sold the property later.

Depends. Some will reimburse you for moving expenses. Others will also pay for your temporary housing (or simply let you use the corporate housing they maintain) during first couple of weeks, while you look for a place to live. Yet others will put you in touch with a local realtor whom they have on retainer to assist incoming employees with home purchase free of charge to the employee.
