Normally 23 pairs. The gender chromosomes are a special pair, because they are very different from eachother.
Sometimes one of the pairs contains 3 chromosomes ("trysomy"). In that case the person in question has a 'syndrome'. Example : trisomy of chromosome 21 is the Down syndrome or mongoloïd.
There are other trisomies known, but less frequent.
