As a Canadian myself, they're ALL recognizable.
BC has a fairly straight eastern edge and a rugged coastline.
Alberta has a fairly straight western edge and a perfectly straight eastern edge. North and south edges are also coincident with latitude lines.
Saskatchewan has perfectly straight edges (east and west), with latitude lines marking the north/south edges.
Manitoba has a straight west edge, and the eastern edge intersects Hudson Bay, providing a distinctive coastline.
Ontario has a (generally) trapezoidal shape, with the top edges of the Great Lakes making a definite impact on the southern edge.
Quebec is more triangular, and is broken by the St Lawrence seaway.
New Brunswick is almost perfectly square, with a slight tail at the northwestern corner.
Nova Scotia is distinct, in that it is generally the shape of a lobster (inculding a huge claw, which corresponds to Cape Breton).
Newfoundland is somewhat triangular, but the rugged coastline is definitely unique.
Yukon Territories are kind of the same shape as Newfoundland, but have nearly straight boundaries on western and southern edges.
Northwest Territories are more-or-less triangular, with literally thousands of good-sized islands to the north.
Nunavut is somewhat triangular, but has the distinctive definition from Hudson Bay, Ellesmere Island, and Baffin Island.

Either PEI (a horizontal island pinched in the middle) or Nova Scotia (a vertical "island" with Cape Breton Island sitting atop the Nova Scotia peninsula at the bottom).
Although Halifax is connected to New Brunswick by the isthmus at Truro (the head of the Bay of Fundy), Nova Scotia is "almost" an island.
As between NS and PEI, I'd pick Nova Scotia, but Prince Edward Island would be a good choice too.
As for the "mainland" provinces, I'd personally select Ontario over Quebec. But NS and PEI tops both of them IMO.

Quebec, not only it's the largest but it's the most distinct because of the St-Lawrence river which creates a peninsula at the Gulf of St Lawrence

Saskatchewan. Its eastern and western boundaries are straight lines pointing exactly to the geographic North, and its southern and northern boundaries are aligned with latitude lines.
