It depends on where you are submitting your CV.

If you are submitting your CV for a job and your degree is not an obvious fit for that job, you might list the relevant courses that qualify you either in your CV or cover letter.

I'd advise you to make a "master" CV that has every detail in it and save it for reference. When you apply for a job, pull up the master file and tailor it to be relevant for the job that you are applying for. Sending out a generic CV that is "one size fits all" is only good if you are applying for a generic job. If you are applying for a specific job, you will need to tailor your CV to fit that job.

And you really MUST use spell check and correct grammar on your CV and cover letter.

You can or you don't have to. It really depends on the message you're trying to convey. If the course sounds impressive, go ahead and list it. If you think it sounds bad or they might figure out it's easy, then just list the projects.
