ejaculation is basically caused by a muscle spasm during orgasm, it is possible to disassociate the spasm from the orgasm, in which case you can stll have the mindf*ck, but the ejaculation is stopped or delayed.. this allows a second orgasm.
you can reduice the sensitivity of the pen1s through various means - by preliminary manipulation (w@nking an hour or two before sexual intecourse takes place) or through chemical means - There are propriety medicines, and such, that you can use (I am told that a small amount of cocaine on the glans will reduce sensitivity) and plenty of lube, to reduce friction.

If you strengthen your so called PC-muscle (pubococcygeus muscle) you can get more control about ejaculation. Training it is quite easy. Just search the internets. You will certainly find plenty.

I can't speak for everyone, but I find that it's usually Rachel Weisz or Jennifer Connelly.
And while it might be possible to prevent it, I don't see any real reason why you'd want to.
