In zelda there are many different gadgets. But it all changes by what game you want to know. Alot of the game dont share the same story line or anything of the sorts. Most of the game you are just doing the exact same thing just in a different way and different graphics. But I will do my best to tell you each weapon, armor, and gadget used.

In the newest Zelda game for the Wii there are many new ones.
Here is a list of them

Spinner-Lets you spin into places in the wall.
Claw- Lets you grab onto things
Double Claw- lets you grab onto things and attack and/or move onto other things.
Magic Armor- You can not take dmg...but at a price.
Green Tunic- Starting Tunic
Zora Tunic- lets you breath underwater
Ball&Chain-A heavy ball and chain that you throw to kill people..think of the enemy on Zelda on the supernes.
Iron Boots- Lets you walk at the bottom of the water..along with on the "walls."
Lamp- Lets you light things...along with seeing in the purple fog.
Sling Shot-..explains itself
Bow-..explains itself
Bombs-Lets you kill certain types of things along with blowing things up.
Boomberang- Lets you create wind and move things.
Wooden Shield- Can be burnt but does protect you
Iron Shield- (cant remember exact name even if that is the name sorry) Protects you the most and can not be broken.

In Zelda 4 swords there are different items too
Also a booberang but cant make wind--almost every Zelda game has one.
Gnat hat- Turns you into a tiny dot in the screen so you can move places you couldnt before.
Roc's Rope- Lets you jump
Bow--almost every Zelda game as one
Magnetic Glove- Lets you to pull or repel yourself to or from a nearby magnetic block.
Pegasus Shoes- Lets you run towards thing with your sword out
Shield-explains itself

This is about all I can remember at the moment. Hope it makes you a even bigger fan of Zelda.

I started out knowing nothing about the game like you, I am an addict now. I keep saying I will not spend $50 for the new game. I dont' need it. then it comes out and I MUST HAVE IT!!!! there are many different (nifty) toys Link can play with. Boomerang, bow, upgradable swords and shields are standard. but in some you can change clothes, get special weapons. Like in Windwaker you get a big Deku Leaf, that's cool cause you can float in the air, In Majora's Mask (NOT a game I recomend for a 1st timer) the masks you collect give you different powers, Ocarina of Time you get the mirror shield (well you get that in a couple of them) ect
there are usually about 8 dungeons or temples or whatever they feel like calling them. in a story line like Ocarina of time you play a forest, mountain, then water. Then you play another forest, mountain, water, and go on to play a shadow temple, and a spirit temple. then have a boss that makes you want to throw the whole thing away cause he WILL NOT DIE!!!! Then you figure out how to kill him and everyone is happy!!!!
the history changes with each one. you'd have to play them to learn them.
