I think it has something to do with the molar heat of fusion for ice...please help, thanks!! :)

You are right! Water has a very high heat of fusion compared to the leaves, fruit, etc. This means that the water will 'absorb' a lot of cold before it freezes, protecting anything that it covers!

the skinny ice upload a layer over the fruit which provides them heat temperature. EX: Eskimo's in igloos. whether that's chilly outdoors, and that they build an ice look after, they're heat below the ice.

This provides an insulating barrier to the harder cold surrounding the tree !!
