Newsradio - but I'd also have to reincarnate Phil Hartman.
Mr. Show - HBO screwed up bad when they cancelled that.
Carnivale - It wasn't the best HBO show ever, but I still want to find out what the hell was going on.
The Office (UK) - way better than the US version. It ended perfectly, but I'd like to see those characters again.
Extras - Ricky Gervais' other hilarious show. I believe he's finished with it after two short seasons.

Only one? I have quite a list, but I'll just give you the top four:
Invasion
John Doe
Hope Island
Joan of Arcadia
All are 'one-season wonders', except for Joan of Arcadia, which went 2 seasons. If I HAD to pick just one, it would probably be either John Doe or Invasion.
It's also interesting to note that all four of these shows ended on cliff-hangers, too. No resolution whatsoever. :(

Reunion - even tho I didn't love the show, I got into it because it was during the summer and everything else was reruns...I would bring it back because it ended without knowing who the killer was!
I would also love to bring back Related, The Bedford Diaries, Justice, and Law & Order: Trial By Jury

Sports Night. Hands down my favorite. It was extremely well written, had great stars like Robert Guilliame, Felicity Huffman, Peter Krause and several others I loved, and just was a fun show to watch.
