The Postman....it stars Kevin Costner as a con-artist turned mailman in 2013 after the world destroyed itsself.
This is a movie that you will love or you will hate. Its long and slow in some spots but it is a Costner movie and if you have seen any of his movies you should expect that. I enjoyed it.
Another one is Red Dawn..about a group of high school kids fighting a guerrilla war against the Russians and Cubans after they invade the U.S. using airliners. It gets cheesy but it is an 80's movie. I like this one alot but I was 13 when I seen it.

I liked Demolition Man. The Matrix (if it counts as post-apocalyptic) was good too.

Another good bit of fiction, btw, is Tales from the Afternow. (see references) This is a series of recordings 'from the future' to try and prevent the future from happening as it did in the series. Not a movie, but very interesting. 17 episodes long, each episode about an hour... over 17 hours of spoken dialogue. (Still in production, but apparently on hiatus.)

Battlefield Earth

Just kidding.

THX-1138
Don't think Clockwork Orange qualifies as "post-apocolyptic", but it is certainly chilling vision of the future. Surprising how much seems to have come true.

Does it really have to be a movie? It could be a game, and the Fallout series from about 10 years ago is really good.

I dont know if you can find a way to fit it in but I think Dark City was amazing. If you look hard enough you can draw a few parallels
