In my speech class, people had good luck teaching people to do things that had them get out of their seats. One girl taught a line dance (super fun!). I taught a game that you play in a circle:

In a college speech class, I gave a speech about how to "feng shui" your bedroom--using feng shui principles of design, how to improve your love life, get better grades, etc. It was pretty fun.
Just choose something you're interested in and you think people would enjoy actually doing. You'll do great!

Try paperfolding, but pick a fun simple model, like a bird or other animal. You can use squares cut out of magazine ads for color.
Go to the library or bookstore and bring some paper to practice so you can find a model that is fairly easy and fun. (When you demonstrate for the class, you may use a LARGE square that everyone can see, or make a poster where each step is done with a separate square and posted as a display to follow along step by step; and also photocopy the instructions for each person.)
For very simple models, there are fish or birds with very few steps for elementary age kids.
My favorites are by JOHN MONTROLL. His "angelfish" is easy but impressive looking when you use fancy paper, such as glossy magazine print or colorful wrapping paper.
For all ages, the Japanese peace crane is very popular, and has an interesting history behind it. I recommend the $5 book "Sadako and the Thousand Paper Cranes" by Eleanor Coerr which has simple instructions in the back.

Well back in the day, i had a speech like this. I decided to teach them all a card trick. I didn't know how to do it myself, so I decide to buy a book on it. It was such a hit that I was invited to a lot of parties and that is how I met my first girlfriend.
