I student-teach full time, which is probably similar in terms of stress (what we lack in running around on the job we make up for in marking and lesson planning). At the end of the semester I kick my feet up and go back to my parents' house! Sleep in every day until noon, watch my laundry miraculously wash itself and gaze in wonder as dinner appears magically on the table! When it's time to start a new semester in January I go on a detoxifying "diet". I get really bad sugar-withdrawl headaches for the first few days but after that my energy levels triple.

Don't wait until after the semester. Get regular massage therapy. Check the research, it will help you all around and even help you in school.
As far as destressing after each semester, try volunteering in the NNICU. Give something to those who need it most. It's very rewarding and a good experience.
The "go to your parents house" answer above is also a good one.
