Pickups and volume can make all the difference in the world. Single coils are thinner sounding, but scream really raw. Humbuckers sound fatter and heavier, and they don't buzz the way single coils do when you're trying to be silent.
If you're looking for the widest tonal possibility, have a repair dude install a coil tapper. This way you can play with the standard humbuckers or, when you flip the tap switch, play with single coils.
Listen to your favorite guitarists. Find out what type of pickups they use and have a tech replace your Epi HB's. Then get the coil tapper. Rock on!!

Adding MORE pickups to your guitar will require some pretty fancy structural modifications to the guitar... something you'd be well advised not to do.

If you want to put in DIFFERENT pickups you'll be limited to full sized humbuckers (with the zillions of variations) unless you want a sloppy looking guitar. P90s and others are smaller than the humbuckers your guitar has right now.

Go out and try different guitars and inquire what kind of pickups it has or peruse the technical info on the websites of pickup manufacturers. Chances are you'll be able to cull something that meets your needs.
