Most crustaceans probably don't roll into a ball when disturbed because they can't. Some like the pill bug are able to roll into a ball. Crustaceans are a very diverse group of animals. See this link for a list of a few types of crustaceans:

Maybe some do, but I think you are thinking of mollusks. Crabs, lobsters, etc., cannot roll up into balls. Mollusks have shells they can hide in(snails, clams, oysters, mussels, etc.)
