It is generaly believed that handshaking started in the Roman Empire when people would grasp the other person's elbow to show that they were not carrying a weapon and had no weapons up their sleeves. See website below.

I have heard it is something to do with showing the person you are meeting that you are not carrying any sort of weapon- like in the old days when people carried swords and so on. That is why here in the UK we drive on the left hand side of the road, it was so men on horseback could defend themselves effectively if they were right handed.
