Yes, you can. There is just one Mary, so you would write either "Mary's dream" or "Mary's dreams". Both are correct.

There is definitely NO apostrophe on the S of dreams. The better wording would be something like "All Mary's dreams will come true" but "Mary's dreams will come true" is grammatically correct.

That is correct. You use an 's after Mary to designate that the dreams belong to her. You use an "s' with dream to designate that there is more than one.

"dreams" is more approprieate because one person will have more than one dream!
