Every guide I read says to keep as close to 1000 as possible. why?

The HyperTransport is different than FSB on Intels, the HyperTransport can only so high before it becomes unstable. That is why you try to keep it around 1000.

A higher HT would be better, but there is a limit to how high a particular motherboard will go before becoming unstable.
