The Henderson Fiesta is petty good and affordable , I like the Aladdin 2 but is more price.

Each time I go to Vegas, I ask this same question to a taxi driver. Most recommend the Rio. They have 2 buffets at opposite ends of the casino floor. World Buffet (separate sections for Italian, Asian, Mexican, etc.) Then the Seafood buffet. Like someone else said, get their early, I have waited 45 min. to an hour.

The Rio, Mandalay Bay, and the Bellagio have the best buffets in Vegas, esp for you seafood lovers.
I know you asked about a buffet, but I have to include 9 at the Palms. It's a pretty trendy steak house, but the food is unreal. They have this gnocchi made with truffle oil that melts. Man, I'm getting hungry!

For quality seafood I would go to Bally's buffet. It is about $50 a person but serves champagne and lobster and king crab legs. It is a wonderful buffet, not well known but fabulous if you have the cash. Also has jumbo shrimp and you eat with nice linen napkins at a nice restaurant - not in a crowd of people in shorts and tank tops.

As you can see from the wide array of answers you've received so far, you can go pretty much anywhere in Vegas and get a delicious meal. I think that if you stick to the higher end hotels, you won't be disappointed when it comes to the seafood. My personal favourite was Cravings buffet at the Mirage. DELICIOUS and super fresh!

Bellagio buffet is better than Wynn buffet. ... Wynn buffet has better desserts though.
MGM buffet has alot of vegie selection.
Mandalay Bay buffet is mostly red-meat.
Rio used to have the best seafood... but not anymore.
Aladdin buffet has too large of portion. I ended wasting them after 1 small bite.
I've eaten at almost all of the buffets. Quality changes every now an then.
